Apple Cinnamon Protein Muffins

Our Superstar Instructor Jesikah Ings has come up with delectable recipe for Apple Cinnamon Protein Muffins and we want to share it with you

Serves: 8 ⠀

Ingredients:
2 cups of almond meal⠀
60 grams of Vanilla Protein Powder ⠀1 tbsp of baking powder ⠀
1/4 cup of maple syrup ⠀
60 grams of Nuttelex (or Butter if not Dairy Free)⠀
2 eggs ⠀
100ml of  Almond Milk (Unsweetened for lower sugar)⠀
2/3 green apples, diced ⠀
1 tbsp of ground cinnamon ⠀

Method:⠀
1. Dice Apple and stew in pan for approx. 5 minutes⠀

2. Combine almond meal, protein powder, baking powder, and maple syrup

3. In a separate bowl, whisk Nutellex, eggs, and milk ⠀

4. Add stewed apple to dry mix, and then combine wet mix into dry

5. Combine all together

6. Pour into muffin tins, and bake for 20-25 minutes

Enjoy warmed with a cup of tea or dollop of Greek or coconut yoghurt ☕️

 

Jess’ Top Tip for Success with this Recipe: Don’t mix not mix too much as this can cause the mix to become quite tough!!
