13 Sep Roasted Broccoli & Cauliflower Salad
SIMPLE & DELICIOUS!
2tsps Rice Bran Oil (Or Oil of choice)
1 Large Head Cauliflower
2 Medium Heads Broccoli
1½ tsps Tumeric
1 tsps Dried Garlic
1 Shallot or Small Red Onion (Optional)
1 Large Bag of Mixed Greens/Spinach
20g Whole Egg Mayonnaise
Preheat oven to 200 degrees.
Slice the Broccoli and Cauliflower up and combine the florets into a large freezer bag, sprinkle oil, turmeric and garlic on top and then shake the bag to ensure that the broccoli and cauliflower is coated in the seasoning.
Place the broccoli and cauliflower in the oven and let cook until browned and tender (approx 20 minutes). Remove from the oven and set to cool.
Dice the red onion/shallot and combine with the broccoli, cauliflower, greens and mayonnaise in a bowl and toss to combine.Serve with protein of choice eg: tin of tuna, chicken, tofu, chickpeas etc
