Vegetable Lo Mein

Serves 4

INGREDIENTS

2 Packets Slim Noodles

3 Zucchinis

2 Tomatoes

2 Carrots

400g Protein of Choice (Chicken, Beef, Tofu, Pork, Prawns, Fish etc)

3 tsps Ground Ginger

4 Shallots

6tbsps Hoisin Sauce

3tbsps Soy Sauce

2tbsps Lemon Juice

2tbsps Szechuan Sauce

1tbsp oil

METHOD

Prepare the noodles by putting the packet contents into a colander and running cold water over them for about 30 seconds and make sure you use your hands to separate the noodles. Set aside over the sink to drain.

Then mix together the hoisin sauce, soy sauce, lemon juice and Szechuan sauce in a bowl and place aside.

Use a vegetable peeler to shave the zucchini into ribbons.. Chop your carrots, personally we like to do them in little matchsticks for the authentic Chinese takeaway feel but that can be a little strenuous so feel free to cut them however you please! Dice the ginger, shallots, tomato and protein (make sure you cut this into even pieces) and then set aside.

Heat a pan with the oil and then add your ginger and your protein source and cook through. Add the carrots and tomatoes and cook allowing the carrots to soften slightly, throw in the zucchini and noodles and then pour the sauce over the top. Simmer, stirring occasionally and let the sauce begin to bubble!

Sprinkle with the shallots, serve and enjoy! You could even add some cauliflower/brown rice to get that true takeaway feeling!
