1/2 small capsicum
2-3 medium tomatoes
1 medium cucumber
½ small red onion
50g reduced fat feta cheese
8 kalamata black olives
Extra virgin olive oil for drizzling
1 tsp dried oregano
Chop capsicum, tomatoes, cucumber and finely dice red onion
Place salad vegetables in a bowl, add olives and top with feta
Drizzle olive oil over the top and garnish with a sprinkle of oregano
Serve with lean chicken, lamb, fish or any main dish!
