Ingredients
4 salmon fillets
2 medium zucchinis
2 red capsicums
1 medium red onion
2 tbsp extra virgin olive oil
1 tsp Harissa
1 small bunch parsley
Method
Preheat oven to 200 C
Dice onion, zucchini, capsicum, drain chickpeas and place into a bowl
Mix extra virgin olive oil and Harissa
Toss ¾ of EVOO and spice mixture with vegetables
Spread vegetables evenly on the baking sheet and place in the oven for 20 minutes
Remove pan from the oven, toss vegetables well
Place salmon fillets on the pan between vegetables
Brush salmon with remaining spice mixture
Bake for 10 minutes or until salmon is cooked through / flakes easily
Garnish with flat leaf parsley
