Chocolate Chip Cookies

Makes 14.

Ingredients 

  • 200g Canned Chick Peas – trust us you won’t even taste the chick peas!
  • 1 tsp Vanilla Extract
  • 165g Natural Peanut Butter/Almond Butter or any nut butter variation you like – make sure it’s natural so the biscuits don’t come out oily
  • ¼ Cup Honey/Agave/Maple Syrup
  • 1 teaspoon Baking Powder
  • ½ Cup Choc Chips of Choice (Use a Sugar Free alternative to keep them lower in sugar) 

Method

  1. Preheat oven to 175°C
  2. Line Baking Tray with Baking Paper
  3. Place Chick Peas, Vanilla, Peanut Butter, Honey (or other) and Baking Powder in a  Food Processor and combine until smooth. Ensure there are no lumps or chunks!
  4. Transfer to a mixing bowl (it will be quite thick and sticky) and stir in chocolate chips
  5. Spoon 1 tbsp of mixture onto Baking Paper and flatten slightly
  6. Bake for about 10 minutes and set aside to cool completely (this dough does not set like a normal cookie until cool)
  7. Store in an air-tight container at room temperature or in the fridge for up to 1 week

Savoury Nut Mix

Nuts are brilliant source of brain food and an awesome quick healthy snack! They are high in fat, so be careful because these little morsels are so more-ish that you might just eat your way through them all!

Ingredients (Makes 2 Cups)

  • ½ tsp Ground Cumin
  • ½ tsp Paprika
  • ½ tsp Curry Powder (optional but you can use hot and upt he spice a ltitle if you want!)
  • ½ tsp salt
  • ¼ tsp Garlic Powder
  • ¼ tsp Cayenne Pepper (more or less to taste)
  • ¼ tsp Turmeric
  • ¼ tsp Ground Ginger 
  • ¼ tsp Cinnamon
  • 2 tbsps Oil (Olive, Coconut, Peanut, Avocado etc)
  • 2 Cups Raw Nuts of your choice (a mixture is always good)

Method

  1. Preheat oven to 160°C and line a Tray with Baking Paper
  2. Combine the spices in a bowl that has the capacity to hold all the nuts
  3. Add oil and combine until a smooth paste is formed
  4. Add the nuts and mix until all nuts are evenly coated in the spice mix
  5. Pour nuts onto the prepared pan in a single layer
  6. Bake nuts for 12 – 15 minutes, mix them at the halfway point
  7. Remove from oven and cool completely before storing in an airtight container

Cookie Dough Balls

You won’t believe these are edible and healthy!

Ingredients (Makes 15 Balls) 

  • 1 Cup Rolled Oats
  • ½ Cup Pitted Medjool Dates 
  • ½ Cup all-natural Nut Butter of choice (make sure it’s runny!)
  • ¼  Cup Maple Syrup
  • 1 tsp Vanilla Extract
  • Pinch Salt 
  • ½ cup Chocolate Chips (Use a sugar free option if you prefer)

Method

  1. Blitz Rolled Oats on high in food processor (Oat Flour Consistencey)
  2. Add Dates, Nut Butter, Maple Syrup, Vanilla and salt to your food processor and blitz on high for 2 minutes (keep scraping the dough from the sides) 
  3. Stir in Choc Chips
  4. Spoon out 1 tbsp of dough and roll into balls between your hands
  5. Sprinkle lightly with sea salt (if desired)

Baked Zucchini Chips

The BEST alternative to your run of the mill potato chip! Dip with your favourite dip or just grab a handful and go!

Ingredients (Makes 8 Servings)

  • 4 Zucchinis (Evenly and Thinly Sliced)
  • 2 Tablespoons Olive Oil 
  • Salt (to taste)

Method

  1. Slice the Zucchini as thinly and evenly as possible (preferably use a mandolin for consistency 
  2. Place the Zucchini Slices between two sheets of paper towels and press down on the paper towels to remove some of the moisture
  3. Preheat oven to 115°C and line trays with baking paper
  4. Lay the zucchini slices in a single layer and brush with olive oil
  5. Sprinkle Zucchini with Salt (or any other spices that you like)
  6. Bake for 1½ – 2hrs or until crips and golden
  7. Allow the Zucchini to cool completely on the tray and store in an airtight container
