INGREDIENTS

1/2 Cup Smooth Peanut Butter (130g) 1/3 Cup Maple Syrup (100ml)

1/4 Cup Cacao Powder, sifted (30g) 1/4 Cup Coconut Oil, melted (50ml)

1 Teaspoon Vanilla Extract

Pinch of Pink Himalayan Sea Salt

METHOD

1. Add the maple syrup and coconut oil to a clean mixing bowl, sift in the cacao powder then stir using a spatula until all the powder has dissolved.

2. Add the peanut butter, salt and vanilla extract to the bowl and mix well. You may like to use a whisk here to break up any chunks of peanut butter. The batter is ready for the next step once its glossy.

3. Place a silicon cupcake mould or 12 patty cases into a baking tray. Fill each hole evenly with mixture then place the tray in the freezer for three or four hours to set.

4. Once set, remove from the freezer and pop out each fudge piece from its casing. Dust with extra cacao powder then store in an airtight container in the freezer for up to 1 month.
