As the weather warms, Spring is the perfect time to enjoy lighter and fresher meals! Enjoy Gen’s Chicken and Mango Salad for a quick and easy lunch!

Ingredients (Serves 2)


  • 1 Iceberg Lettuce
  • 2 Tomatoes
  • 1/2 Red Onion
  • 1 Whole Mango
  • 1 Avocado
  • 1/2 Cucumber
  • 200g Chicken Breast Grilled
  • Splash Olive Oil (if Grilling Chicken)
  • Handful of Dry Roasted Nuts (Optional)


  • 1/2 Lemon
  • 2 tbsps Whole Egg Mayonnaise


  1. If grilling chicken, heat oil in pan and grill chicken until well cooked, set aside to cool
  2. Roughly Dice Iceberg Lettuce, Tomato and Cucumber and spread on large salad dish
  3. Thinly Slice Red Onion and Sprinkle on Salad
  4. Slice Avocado and Mango and Layer on Salad
  5. Sprinkle Nuts on Salad if desired
  6. Slice Chicken and Add to Salad
  7. Juice Lemon and Stir together with Mayonnaise until combined
  8. Dress Salad to taste


Gen’s Top Tip: If you’re in a rush, save time by grabbing a 1/2 Chicken from the Deli at your Local Supermarket! Alternatively grill a little more chicken at the same time and set aside to be used for tomorrow’s lunch!
