As the weather warms, Spring is the perfect time to enjoy lighter and fresher meals! Enjoy Gen’s Chicken and Mango Salad for a quick and easy lunch!
Ingredients (Serves 2)
Salad
- 1 Iceberg Lettuce
- 2 Tomatoes
- 1/2 Red Onion
- 1 Whole Mango
- 1 Avocado
- 1/2 Cucumber
- 200g Chicken Breast Grilled
- Splash Olive Oil (if Grilling Chicken)
- Handful of Dry Roasted Nuts (Optional)
Dressing
- 1/2 Lemon
- 2 tbsps Whole Egg Mayonnaise
Method
- If grilling chicken, heat oil in pan and grill chicken until well cooked, set aside to cool
- Roughly Dice Iceberg Lettuce, Tomato and Cucumber and spread on large salad dish
- Thinly Slice Red Onion and Sprinkle on Salad
- Slice Avocado and Mango and Layer on Salad
- Sprinkle Nuts on Salad if desired
- Slice Chicken and Add to Salad
- Juice Lemon and Stir together with Mayonnaise until combined
- Dress Salad to taste
Gen’s Top Tip: If you’re in a rush, save time by grabbing a 1/2 Chicken from the Deli at your Local Supermarket! Alternatively grill a little more chicken at the same time and set aside to be used for tomorrow’s lunch!Â
